Probate is a legal document.  Receipt of probate (granted by the court) is the first step in the legal process of winding up an estate (i.e. liquidating the assets) of a person who is deceased.  The court decides on the legality of a Will and, if approved, grants its approval to the executor or, if the deceased died intestate (i.e. without making a Will) to the personal representative.

Having been granted approval by the court the executor (or personal representative) is duty bound to wind up the estate and distribute the assets (both financial and real) as per the wishes of the deceased expressed in the Will.
